Ingredients
Pork - 1 Kg
Turmeric powder - 1 heaped teaspoon
Pepper powder - 2 heaped teaspoon or to taste
Salt - to taste
Vinegar - 1 tsp
Onions finely chopped - 2 nos
Green chilly chopped - 5 to 8
Fresh ginger finely chopped - 2 table spoons
Fresh garlic finely chopped - 2 table spoons
Turmeric powder - 1 tsp
Coriander powder - 3 tsp
Freshly ground garam masala - 1 tsp
Thick coconut milk - 1/2 cup
Oil - 4 table spoons or as required
Boiled potatoes cut into big chunks
- 2 nos ( optional)
Tomatoes finely chopped - 1 no (Optional)
Method of Preparation
Mix chopped pork with turmeric powder, pepper powder, salt and
vinegar. Set aside for 1 hour.
Cook the pork in a pressure cooker until fully cooked
Fry the onions in oil in a heavy bottom pan. (Add 1/2 tsp of sugar
which increase the flavour of the onions) After they turn slightly brown
add the chillies, ginger and garlic . Add the turmeric powder and fry for a minute
Now add the garam masala (and if required some pepper powder and
chilly powder) Add the chopped tomatoes at this stage if required and fry till gravy
turns slightly thick.
Now add the cooked pork mix into the pan .Mix them thoroughly and add
half a cup of water and the coconut milk. Check the salt.
Add the chopped potatoes(Optional).
Cover and cook till the spice permeates the pork.
Uncover and stir the mix untill the gravy becomes thick.
Garnish with freshly chopped coriander leaves.
